About Chloe — and why she stands behind this bar.
Bar Chloe was born in Shenyang — a city accustomed to cold, to directness, and to countless quiet tender moments hidden in plain sight. Chloe has learned, grown, stumbled, and been gently held up by seniors and strangers behind many different bars in many different cities. She has never met Mr. Kazuo Ueda in person, yet his words, his films, and his lifetime of quiet work became the deepest light in her bartending life.
For Chloe, making a drink and making an offering are the same gesture. A guest is not a customer — they are simply the person sitting across the counter tonight, and the entire reason the glass exists.
“Hard” means exactly what it says — a shake that is forceful and complex. Beyond simply cooling and mixing, its original purpose, as Mr. Ueda conceived it, was to soften the sting of alcohol and the sharpness of ingredients. When executed well, fine ice blooms across the drink's surface, and more importantly, air is folded into the body itself — so the guest tastes not harshness, but roundness and depth.
